This video should you guys give a good view on what adaptors for the Digital AV-Out have recently become available, and which one might be the right one for your case. Some of them are for component video, some are for RGB, some are for HDMI. Not all adaptors are built equal, so take your time.

Crazy there i've had cats before for pets but none of them ever try to,chew on av cables.Guess you're lucky you were able to get the gc component cables repaired.If you hadn't been able to there are third parties selling hdmi adapters for the gc now. I've had lots of cats over the years too and never any issues with cords, but I did have a rabbit that would chew on cords. And the little bastard pooped everywhere too. I miss that little bastard.

My rabbit in his prime was pretty eager in ripping apart wallpapers and humping his plush T-rex.

Of course the first party stuff is good. I really like Wave Race a lot. Donky Konga Jungle Beat (the platformer that uses a drum controller) and Sunshine as well. Wind Waker is my second favorite Zelda* and Metroid Prime is just about the only FPS I can stand for any length of time at all.
3rd Party:
I like Viewtiful Joe a lot but it’s not for for everyone.
Kinnikuman: awesome space wrestling game based on the rebooted anime from the GC era. Simple and hilarious, vastly superior to the completely different Sony version.
Mobile Suit Gundam: The Ace Pilot (translation of Japanese title, the English on the box says “The Pilot’s Locust” for some reason.) This is a lot like the PS2 ones but with better graphics. It tells the 0079 story again. This game came out with the custom Char Cube.
Alien Homonid: GC version is way easier and therefore beatable.
Star Wars Arcade: this was a straight port of the bizzarly eternally fun original. It was a preorder thing for some modern grandiose Star Wars fodder nobody would care about today. It’s always fun for me and I’ve been sick of Star Wars for a long time now.
Pac Man Versus: this is the Death Tank of the Cube. This is a four player game where three people are ghosts and have limited vision and the other player is Pac Man who is on his own but his controller is a GBA (cable needed) and with that he can see the whole screen. This game is pure gold. It’s weird I don’t hear more people mention it.
Godzilla: Destroy All Monsters Melee: does exactly what it says on the box. Great fun for G fans.
Space Raiders: nobody ever talks about this! It’s basically Space Invaders on foot with Cube level graphics. You shoot upward. This is a good one.
Bomberman Land 2: a theme park party game kind of thing with a massive Bomberman game built in. Hugely underrated, IMO. Has a bunch of tiny GBA games in it. This was the last B Man game I enjoyed.
Cubivore: amazingly this isn’t a PCE game.
Killer7: Top weird! My God, its full of weird.
Super Monkey Ball: I prefer the first one but both are great, basically the the DC port was cancelled so the banana stick-less console versions went to Nintendo.
SSX Tricky: sometimes American games are good too. This one is pretty nuts and a lot of fun.
Since this is a PCE forum I should mention that Momotaro Dentetsu 11 and 12 are on Cube but I’ve never played them. There is also a port of Tengai II that upgrades some things but leaves most of the game alone. It’s not that great but whatever.
* Link’s Awakening, of course.

Regarding Pac-Man vs. It's fantastic, but the need for that link cable and a GBA makes it a little awkward to play. Some years later that was bundled with one of the Nintendo DS versions of Namco Musuem which makes multiplayer a slightly smoother experience. It's a great dark horse pick though, as it's an absolute blast to play but was bundled as a little standalone demo disc or as an extra in one of those 3D platformer Pac-Man world games.
Tying this back to PC Engine games, Revival Chase also has a multiplayer mode which adds a great multiplayer experience to a clone of the old arcade maze game Lock N Chase.

On the DS...so does everyone need a DS and therefore have their own screens? That’s cool I guess but having three people share the TV really amplifies the team spirit from my experience.

Yeah, on the DS everyone needs the DS and has their own screens.
And I agree that using a TV amplifies the team spirit but passing that GBA around at times got a little tedious especially if you had a bunch of other players using wavebirds and one person tethered with that darn GBA link cable.
Added in edit: The GameCube is a really underrated multiplayer system, with Pac-Man vs and Super Monkey Ball you can have an evening of frantic party game action that's among the most fun 3 or more player experiences I've had on a console game.

It's a great dark horse pick though, as it's an absolute blast to play but was bundled as a little standalone demo disc or as an extra in one of those 3D platformer Pac-Man world games. It was packed in with R: Racing Evolution, too, which is how I got it. Anyhow, since Zeta mentioned Kinnikuman (a.k.a. Ultimate Muscle: Legends vs. New Generation, at least here in the US), I'm reminded that there are some pretty good wrestling games on the system. Wrestlemania X8 is lousy, but Wrestlemania XIX is decent and the Day of Reckoning games are even better.

I LOVE PSO on GC, I even love the often despised PSO Episode III CARD game. It's honestly the one PSO game that has some similarities to the original 4 on Genesis. Turn based battles and comic style cut-scenes. ~~
