Curious to know peoples' tastes here. I know Rondo would dominate the responses, so let's limit it to two other choices.
Bonk's Revenge (a ton of secret areas, collectibles, and an intricate scoring system, with excellent graphics and sound. I hope I can get 999,999 points someday)
Honorable Mention: Liquid Kids (good port, large bosses, alternate levels and warps!)

PC Genjin (Bonk's Adventure) for sure. Easy enough for a casual play and long enough to be satisfying. Momotaro Katsugeki - Just really cute and fun with some bouncy music. Love it.

Valis III is much more than the sum of its parts and although it wasn't through intentional design, the end result is an engaging, rewarding and very fun game that never gets old.
It's much more enjoyable for me and much more of a proper 16-bit Castlevania than any of the 16-bit Castlevania games other than Rondo of Blood.

Just given my own gaming predilections, probably Dragon's Curse or Dynastic Hero. I like that sort of platformer, even if they can feel a little slippery at times. Legendary Axe is also quite nice. I think for actual jump and attack feel, though, Ninja Spirit is just about unmatched. I also feel like the Turbo didn't get many platformers compared to its competition, and fewer still in the US.

Dragon Egg is another one I love. It doesn't get mentioned much. Even by the NEC circles. Check it out if you haven't already.

Just came in to say Bonk's Revenge and I see that several others have already said so. I don't care if it's easy, it's just a beautiful experience. Music, atmosphere, everything.
I must add Valis IV. Of course the main attraction of the Valis games is the music/story/overall presentation, but Valis IV (both inceptions) is a really good platformer. The PCE version in particular is long and sufficiently challenging. I wish people would make games like that again, hell I would do it if I had the money to hire programmers.

Legendary Axe and Ninja Spirit, definitely. Not many notable platformers on the PC Engine, in my opinion, but after Rondo of Blood those two stand out most clearly. I love the way Ninja Spirit is unlike a lot of other ninja games in that it goes for a feudal Japan setting and incorporates a lot of Buddhist mythology and Japanese folklore with regards to boss design.
Honorable Mentions: Liquid Kids, Legend of Hero Tonma.

Platformers is such a broad genre definition, I kind of dislike that games like Rondo and Bonk's Revenge get lumped together like this, lol Personally, I'd say a game with heavy platforming like Shockman would be top of my list, but it has many run and gun elements along with shoot-em-up stages, so I'm probably cheating a bit. With a little polish, this game could've been a near perfect gaming experience. Honorable mention: Legendary Axe II, it's just such a huge jump in terms of gameplay and design from the original! It's hard to ignore!

Well, given that it is actually a completely different game, I wouldn't expect it to be anything like the first. I love both equally. The first has a lot of cool Jun Chikuma tracks and is a great improvement on the Astynax gameplay model.

Kind of in the sense that SMB2 is the true #2 in the series.
